E-scooter hit and run victim embraced by Magpies club

<p>In a heartwarming display of community and sportsmanship, the Collingwood AFL club has come together to support a cherished fan, 81-year-old Jessie Hatch, after a distressing e-scooter incident following the Collingwood-Carlton game two weeks ago.</p> <p>Jessie, a lifelong devotee of the Magpies, was leaving the Melbourne Cricket Ground when she was <a href="https://www.oversixty.com.au/finance/legal/such-a-cowardly-thing-police-hunt-after-e-scooter-hit-and-run-on-81-year-old-woman" target="_blank" rel="noopener">struck by an e-scooter</a> in what she described from the hospital afterwards as "such a cowardly thing".</p> <p>In a touching twist, it was a member of the rival Carlton cheer squad who first rushed to her aid. Reflecting on the incident, Jessie <a href="https://www.9news.com.au/national/great-grandmother-embraced-by-beloved-magpies-after-ugly-escooter-incident/73445ba6-69f0-4954-8984-cc3109e3de30" target="_blank" rel="noopener">recounted to 9News</a>, "Apparently I passed out and they couldn't get a pulse or a heartbeat and I came around finally with someone screaming my name and telling me to wake up and also my son was so distressed."</p> <p>Jessie's son, Greg, expressed his confidence in his mother’s resilience. "She was born in Carlton - she won't admit that - but she was raised in Collingwood . . . So they build them a bit different when they're raised in Collingwood. Tougher than any of us."</p> <p>Despite her injuries, Jessie’s spirit remains unbroken. Dressed proudly in her Magpies jumper, she recently attended a training session where she was warmly welcomed and embraced by the players. </p> <p>The club’s support has been a balm for Jessie. "This is just amazing," she beamed. True to her unwavering dedication, she declared, "I'm going to the game on Saturday. That won't keep me away."</p> <p>In an inspiring gesture of goodwill, Jessie also plans to set aside traditional rivalries to visit Princes Park and thank the Blues fan who helped her. </p> <p>Meanwhile, police have alleged that the e-scooter rider intentionally knocked Jessie down. Entire Knox team stood down after abusing female players

<p>Knox Football Netball Club (KFNC) has stood down its entire mens development indefinitely, following reports of their "inexcusable behaviour" towards an opposing women's team. </p> <p>Reports emerged this week that players from the Melbourne suburban football club rated and attempted to trip over Donvale's female players as they entered the field last Sunday. </p> <p>“They held out their legs to trip the women over and used the phrases yes, no, mediocre, rating each female player. The players were rightly upset but they played out the rest of the game,” veteran reporter Jacqui Felgate said. </p> <p>“I hope the men that did this … are held to account," she continued. </p> <p>KFNC immediately looked into the incident, and on Thursday announced that the whole team had been “stood down indefinitely pending the outcome of the independent investigation” in an open letter shared on Facebook. </p> <p>They also said: "KFNC recognises that such behaviour is completely unacceptable and does not reflect the values of the club."</p> <p>KNFC will also implement a comprehensive behavioural and domestic violence education program across the entire club.</p> <p>“Participation in this program will be mandatory for all members, with a ‘no education, no play’ rule in effect,” Knox said.</p> <p>“KFNC is establishing an ongoing partnership with a local family violence shelter for both education and charitable support.</p> <p>“We understand the gravity of this situation and the importance of taking swift and decisive action. We are committed to learning from this incident and ensuring that such behaviour is not repeated in the future.</p> <p>“Our club stands for inclusivity, respect, and safety for all members, and we will continue to uphold these values in everything we do.”</p> <p>Felgate reacted to Knox's open letter and said that the action was “the very least they could do”.</p> <p>“Women play sport — they should not be subjected to abuse on the field, off the field, whatever, on the base of their sex,” Felgate said.</p> <p>A Donvale player also spoke to the <em>Herald Sun </em>anonymously and said that her team were already "uncomfortable" before the comments began. </p> <p>"We all realised what happened a lot of us broke down in tears and just felt helpless," she told the publication. </p> <p>"I’ve had individual men come up to me and say things that aren’t really appropriate but this was a group of 20 men standing, laughing and making comments about us.</p> <p>“The only thing I want to emphasise is the amount of other men from Knox that were around them not saying anything," she added. </p> <p>“Unfortunately I really do believe that men aren’t going to stop behaving like this unless other men call it out, they don’t listen to women.”</p> <p><em>Image: Facebook/ Knox Football Club</em></p>

New rules to crack down on dodgy taxi practices

<p>New technology is being rolled out on Wednesday, which will make it more difficult for taxi drivers to overcharge their customers. </p> <p>The country's largest taxi payment provider, Cabcharge, is introducing a new system which will link  cab drivers' payment terminals with their meters. </p> <p>The move has been made in attempt to crack down on dodgy taxi practices. </p> <p>Under the current system the two are not connected, so dishonest drivers may disregard the distance and fee on the meter and input a higher sum on their payment terminals, charging customers more money. </p> <p>The crack down has been approved Australia's most extensive taxi network which includes operators such as 13cabs, Silver Service and Black & White Cabs. They are also encouraged to display a sticker that says "We proudly accept Cabcharge."</p> <p>Speaking to<em> 2GB </em>on Monday, Nick Abrahim the CEO of NSW Taxi Council said that the technology was "welcomed news", which will help strengthen customer trust. </p> <p>"We want people, whether they're going to a sporting event or a concert or whatever it is, not even to worry about the transport issues. We want them to go out and make sure they're having a good time," he said. </p> <p>"The majority of drivers are out there, they want to do the right thing they want to look after passengers, but we know there are a handful of those drivers that unfortunately think they can flout the law and get away from it... “Such a cowardly thing”: Police hunt after e-scooter hit-and-run on 81-year-old woman

<p>Victoria Police have released an image of a man wanted in connection to an alleged attack on at 81-year-old outside the Melbourne Cricket Ground after an AFL game last Friday. </p> <p>Jessie Hatch, 81, was walking towards Jolimont Railway Station around 11pm when she was confronted by a man on an e-scooter, who told her to “move off the footpath”.</p> <p>Hatch then "explained that the footpath is not for vehicles and walked around him”, prompting the man to ride off, but he quickly turned around before allegedly hitting her from behind, causing her to fall to the ground and lose consciousness.</p> <p>According to Victoria Police, the rider allegedly did not stop to assist Hatch, and was unsuccessfully chased by a passerby.</p> <p>He was last seen heading west from the Swan Street Bridge.</p> <p>“She walked between 7-10m away and this guy’s doubled back and then smashed her from behind,” Jessie's son Ken told <a href="https://7news.com.au/news/mans-words-to-elderly-collingwood-fan-jessie-hatch-before-allegedly-hitting-her-with-e-scooter-in-mcg-hit-and-run-c-14571902" target="_blank" rel="noopener"><em>7News</em></a>.</p> <p>“Apparently she stopped breathing for 20 seconds or so, that’s what we heard.”</p> <p>Jessie is still in hospital recovering with five stitches in her hand and undergoing more tests on her spine to see if there is permanent damage.</p> <p>“Such a cowardly thing, I don’t know what would have gone into his head to do that,” Jessie told <em>7News</em> from her hospital bed.</p> <p>“Why would somebody do that? He should be ashamed of himself.”</p> <p>Police are investigating the incident, with Ken calling on the alleged perpetrator to come forward.</p> <p>“You made a mistake, you did something wrong, come forward,” he added.</p> <p>The man allegedly involved in the incident was of average height and had fair skin and a stocky build, with straight blonde/brown hair and grey/blue eyes.</p> <div> </div> <p>He was wearing thick-lensed glasses and a red jacket made of a shiny, waterproof material.</p> <p>Jessie’s story quickly gained attention around the AFL world, and Collingwood legend Peter Daicos was among those to offer his support.</p> <p>“I wanted to reach out, I heard about the incident after the game,” he said.</p> <p>“I hope you’re feeling better and I’m really looking forward to hearing that you’re back at the Collingwood games.</p> <p>“All the best from not just myself, but the boys and importantly the Collingwood Football Club. Teen with Down Syndrome sets new world record

<p>A 19-year-old teen with Down Syndrome has conquered the London Marathon and became a Guinness World Record after just five months of training. </p> <p>Lloyd Martin from Cardiff completed the 42.1 km course across the capital with his mother cheering him on. </p> <p>Guinness World Record has awarded him the certificate for becoming the youngest person in his learning disability category to finish a marathon. </p> <p>"I'm so excited to run London. I love being fit and healthy and I want to make my family and friends proud," the teenager said. </p> <p>Mum Ceri Hooper also told the<em> BBC</em> how proud she was of her son's accomplishment. </p> <p>"In Lloyd's words, it's achieving his dream," she said. </p> <p>"Really anything is possible if you put your mind to it. With a bit of work, you can achieve it."</p> <p>Recalling the experience, the proud mum said: "He ran continuously for 14 miles which is the longest he's ever run before." </p> <p>Although Lloyd walked for a bit after his 14-mile-long streak, the crowd cheered him on every step of the way, and despite the challenge the mother-and-son duo had "a ball". </p> <p>The pair were at a loss for words when he finally crossed the finish line and they both "burst into tears." </p> <p>Lloyd is also now the third Welsh Special Olympics athlete to compete in the London Marathon. </p> <p>Prior to completing the world-famous marathon, Lloyed had completed an astonishing 30 Parkruns. </p> <p>Until last Christmas the teenager had never run further than three miles, but his mother was determined to get him marathon-ready. </p> <p>Ceri, who has taken on the London Marathon four times, created a specialised training regime for her son which included weekly runs. </p> <p>Lloyd managed to secure a spot in the marathon thanks to the help of the Special Olympics GB, where he is also a footballer and a gymnast. </p> <p><em>Images: Facebook/ Twitter</em></p>

"Big one for shenanigans": Aussie larrikin paddles a giant pumpkin down a river

<p>In potentially the most Aussie story ever and a suspected world first, one bloke has pinched his mate's award-winning pumpkin to turn into a paddle boat and sail down the Tumut River. </p> <p>The enormous pumpkin was grown by farmer Mark Peacock, who grew the vegetable to a whopping 407kg and would regularly post updates on the gourd's growing progress on Facebook. </p> <p>The pumpkin even earned a fitting name, Tormund after a character in Game of Thrones, and was used to feed his livestock.</p> <p>After the pumpkin had served its purpose, Peacock's friend and local canoe club commodore Adam Farquharson saw a once in a lifetime opportunity. </p> <p>Sporting a sailor hat and pipe, he navigated the hollowed-out pumpkin, dubbed ‘Cinderella’, down the Tumut River in New South Wales’ Riverina region, much to the amusement of bystanders.</p> <p>“Barry Humphries said that he’s a big fan of the unnecessary, and I am too. But he’s random, occasionally,” he said.</p> <p>“I intentionally grew this as a family project and then started doing Facebook updates every week.”</p> <p>For Mr Farquharson, the voyage was simply about enjoying himself and giving locals an opportunity for a laugh. </p> <p>Farquharson joked about potential future exploits but remained grounded about his brief moment of fame as “Popeye the Pumpkin Man.” </p> <p>“I think the worldwide fame will wear off pretty soon. I won’t end up like Taylor Swift. I’ll just get back to life as normal,” he said.</p> <p>Reflecting on the unusual journey, Mr Farquharson humorously considered preserving the pumpkin as a national curiosity by placing it on a pedestal among Australian sporting royalty. </p> <p>“It was a sad moment. Nat Barr breaks down as more details revealed on co-star’s tragic passing

<p>Nat Barr has broken down in tears while paying tribute to Nathan Templeton after his sudden passing. </p> <p>The body of Templeton, a 44-year-old father of two and regular <em>Sunrise</em> reporter, was found on Monday evening after he suffered a medical incident while walking his dog in Geelong. </p> <p>The <em>Sunrise</em> panel confirmed the <a href="https://oversixty.com.au/health/caring/sunrise-reporter-found-dead-at-age-44" target="_blank" rel="noopener">death</a> of their friend and co-host on Thursday morning, playing a montage of Templeton's time on the program, including him reporting from football games, flood zones, Covid labs and at swimming competitions.</p> <p>Barr's voice over could be heard saying, "Thank you, Tempo, for brightening our lives. We are so fortunate to have known you and worked alongside you. You will be missed."</p> <p>Following the montage, Barr cried as she paid tribute to the father-of-two and thanked him for "brightening everyone's lives". </p> <p>"We know you had more stories to tell them (our viewers). We are sorry you can't tell them. Our hearts go out to our family, your two little boys, Kate, and everyone who knew you inside this building and across the Seven Network," she said.</p> <p>"But also so many of you who have written in and just said that you felt like you knew him because of how he... "I've got goosebumps": Samantha Murphy honoured by touching act

<p>Samantha Murphy was last seen leaving her East Ballarat home to go for her usual morning run on February 4, a run that she never got to complete. </p> <p>Her disappearance gripped the nation for the past month, with local volunteers, <a href="https://www.oversixty.com.au/lifestyle/family-pets/new-development-in-search-for-samantha-murphy" target="_blank" rel="noopener">specialist forces</a> and detectives all working together to try and figure out just what happened to the Ballarat mum. </p> <p>Now, Victoria Police allege that she was <a href="https://www.oversixty.com.au/finance/legal/new-details-emerge-in-samantha-murphy-murder-charge" target="_blank" rel="noopener">murdered</a> by 22-year-old Patrick Orren Stephenson, a tradie and the son of former AFL player Orren Stephenson, who was arrested last Wednesday. </p> <p>On Friday, Felicity Ryan put a call out on social media to see if anyone was interested in taking part in a community run to honour Murphy and complete the run she didn't get to finish. </p> <p>The post was met with overwhelming support, with Ryan telling 7NEWS: “I arrived and there was a handful of people... then the cars just started piling in."</p> <p>The group stood in silence for a minute in honour of Murphy's memory before heading off on a 7km run around Ocean Grove at 5.30am on Sunday.</p> <p>“I’ve got goosebumps talking about it now, it was the most heartfelt morning you could imagine ... there was lots of hugging ... there were lots of tears,” Ryan said.</p> <p>Ryan said that she hopes the run can become an annual event on February 4 or the long weekend. </p> <p>Detectives are currently doing everything they can to try and find Murphy's body, but Stephenson has so far refused to cooperate with police. </p> <p>He is due to return to court for a committal mention on August 8. </p> <p><em>Images: ABC News/ Victoria Police</em></p>

Running or yoga can help beat depression, research shows – even if exercise is the last thing you feel like

<p><em><a href="https://theconversation.com/profiles/michael-noetel-147460">Michael Noetel</a>, <a href="https://theconversation.com/institutions/the-university-of-queensland-805">The University of Queensland</a></em></p> <p>At least <a href="https://www.frontiersin.org/journals/psychiatry/articles/10.3389/fpsyt.2021.665019/full">one in ten people</a> have depression at some point in their lives, with some estimates <a href="https://www.sciencedirect.com/science/article/pii/S0749379720301793">closer to one in four</a>. It’s one of the worst things for someone’s wellbeing – worse than <a href="https://www.happinessresearchinstitute.com/_files/ugd/928487_4a99b6e23f014f85b38495b7ab1ac24b.pdf">debt, divorce or diabetes</a>.</p> <p><a href="https://theconversation.com/why-are-so-many-australians-taking-antidepressants-221857">One in seven</a> Australians take antidepressants. Psychologists are in <a href="https://theconversation.com/we-cant-solve-australias-mental-health-emergency-if-we-dont-train-enough-psychologists-here-are-5-fixes-190135">high demand</a>. Still, only <a href="http://dx.doi.org/10.1371/journal.pmed.1003901">half</a> of people with depression in high-income countries get treatment.</p> <p>Our <a href="https://www.bmj.com/content/384/bmj-2023-075847">new research</a> shows that exercise should be considered alongside therapy and antidepressants. It can be just as impactful in treating depression as therapy, but it matters what type of exercise you do and how you do it.</p> <h2>Walk, run, lift, or dance away depression</h2> <p>We found 218 randomised trials on exercise for depression, with 14,170 participants. We analysed them using a method called a network meta-analysis. This allowed us to see how different types of exercise compared, instead of lumping all types together.</p> <p>We found walking, running, strength training, yoga and mixed aerobic exercise were about as effective as <a href="https://theconversation.com/explainer-what-is-cognitive-behaviour-therapy-37351">cognitive behaviour therapy</a> – one of the <a href="https://www.frontiersin.org/journals/psychiatry/articles/10.3389/fpsyt.2018.00004/full">gold-standard treatments</a> for depression. The effects of dancing were also powerful. However, this came from analysing just five studies, mostly involving young women. Other exercise types had more evidence to back them.</p> <p>Walking, running, strength training, yoga and mixed aerobic exercise seemed more effective than antidepressant medication alone, and were about as effective as exercise alongside antidepressants.</p> <p>But of these exercises, people were most likely to stick with strength training and yoga.</p> <p><iframe id="cZaWb" class="tc-infographic-datawrapper" style="border: none;" src="https://datawrapper.dwcdn.net/cZaWb/2/" width="100%" height="400px" frameborder="0"></iframe></p> <p>Antidepressants certainly help <a href="https://www.thelancet.com/article/S0140-6736(17)32802-7/fulltext">some people</a>. And of course, anyone getting treatment for depression should talk to their doctor <a href="https://australia.cochrane.org/news/new-cochrane-review-explores-latest-evidence-approaches-stopping-long-term-antidepressants">before changing</a> what they are doing.</p> <p>Still, our evidence shows that if you have depression, you should get a psychologist <em>and</em> an exercise plan, whether or not you’re taking antidepressants.</p> <h2>Join a program and go hard (with support)</h2> <p>Before we analysed the data, we thought people with depression might need to “ease into it” with generic advice, <a href="https://www.who.int/initiatives/behealthy/physical-activity">such as</a> “some physical activity is better than doing none.”</p> <p>But we found it was far better to have a clear program that aimed to push you, at least a little. Programs with clear structure worked better, compared with those that gave people lots of freedom. Exercising by yourself might also make it hard to set the bar at the right level, given low self-esteem is a symptom of depression.</p> <p>We also found it didn’t matter how much people exercised, in terms of sessions or minutes a week. It also didn’t really matter how long the exercise program lasted. What mattered was the intensity of the exercise: the higher the intensity, the better the results.</p> <h2>Yes, it’s hard to keep motivated</h2> <p>We should exercise caution in interpreting the findings. Unlike drug trials, participants in exercise trials know which “treatment” they’ve been randomised to receive, so this may skew the results.</p> <p>Many people with depression have physical, psychological or social barriers to participating in formal exercise programs. And getting support to exercise isn’t free.</p> <p>We also still don’t know the best way to stay motivated to exercise, which can be even harder if you have depression.</p> <p>Our study tried to find out whether things like setting exercise goals helped, but we couldn’t get a clear result.</p> <p>Other reviews found it’s important to have a <a href="https://pubmed.ncbi.nlm.nih.gov/31923898/">clear action plan</a> (for example, putting exercise in your calendar) and to <a href="https://pubmed.ncbi.nlm.nih.gov/19916637/">track your progress</a> (for example, using an app or smartwatch). But predicting which of these interventions work is notoriously difficult.</p> <p>A <a href="https://www.nature.com/articles/s41586-021-04128-4">2021 mega-study</a> of more than 60,000 gym-goers <a href="https://www.nature.com/articles/s41586-021-04128-4/figures/1">found</a> experts struggled to predict which strategies might get people into the gym more often. Even making workouts fun didn’t seem to motivate people. However, listening to audiobooks while exercising helped a lot, which no experts predicted.</p> <p>Still, we can be confident that people benefit from personalised support and accountability. The support helps overcome the hurdles they’re sure to hit. The accountability keeps people going even when their brains are telling them to avoid it.</p> <p>So, when starting out, it seems wise to avoid going it alone. Instead:</p> <ul> <li> <p>join a fitness group or yoga studio</p> </li> <li> <p>get a trainer or an exercise physiologist</p> </li> <li> <p>ask a friend or family member to go for a walk with you.</p> </li> </ul> <p>Taking a few steps towards getting that support makes it more likely you’ll keep exercising.</p> <h2>Let’s make this official</h2> <p>Some countries see exercise as a backup plan for treating depression. For example, the American Psychological Association only <a href="https://www.apa.org/depression-guideline/">conditionally recommends</a> exercise as a “complementary and alternative treatment” when “psychotherapy or pharmacotherapy is either ineffective or unacceptable”.</p> <p>Based on our research, this recommendation is withholding a potent treatment from many people who need it.</p> <p>In contrast, The Royal Australian and New Zealand College of Psychiatrists <a href="https://www.ranzcp.org/getmedia/a4678cf4-91f5-4746-99d4-03dc7379ae51/mood-disorders-clinical-practice-guideline-2020.pdf">recommends</a> vigorous aerobic activity at least two to three times a week for all people with depression.</p> <p>Given how common depression is, and the number failing to receive care, other countries should follow suit and recommend exercise alongside front-line treatments for depression.</p> <p><em>I would like to acknowledge my colleagues Taren Sanders, Chris Lonsdale and the rest of the coauthors of the paper on which this article is based.</em></p> <p><em>If this article has raised issues for you, or if you’re concerned about someone you know, call Lifeline on 13 11 14.</em><!-- Below is The Conversation's page counter tag. Run out of butter or eggs? Here’s the science behind substitute ingredients

<p><em><a href="https://theconversation.com/profiles/paulomi-polly-burey-404695">Paulomi (Polly) Burey</a>, <a href="https://theconversation.com/institutions/university-of-southern-queensland-1069">University of Southern Queensland</a></em></p> <p>It’s an all too common situation – you’re busy cooking or baking to a recipe when you open the cupboard and suddenly realise you are missing an ingredient.</p> <p>Unless you can immediately run to the shops, this can leave you scrambling for a substitute that can perform a similar function. Thankfully, such substitutes can be more successful than you’d expect.</p> <p>There are a few reasons why certain ingredient substitutions work so well. This is usually to do with the chemistry and the physical features having enough similarity to the original ingredient to still do the job appropriately.</p> <p>Let’s delve into some common ingredient substitutions and why they work – or need to be tweaked.</p> <p><iframe id="IitfH" class="tc-infographic-datawrapper" style="border: none;" src="https://datawrapper.dwcdn.net/IitfH/1/" width="100%" height="400px" frameborder="0"></iframe></p> <h2>Oils versus butter</h2> <p>Both butter and oils belong to a chemical class called <a href="https://chem.libretexts.org/Bookshelves/Introductory_Chemistry/Map%3A_Fundamentals_of_General_Organic_and_Biological_Chemistry_(McMurry_et_al.)/23%3A_Lipids/23.01%3A_Structure_and_Classification_of_Lipids">lipids</a>. It encompasses solid, semi-solid and liquid fats.</p> <p>In a baked product the “job” of these ingredients is to provide flavour and influence the structure and texture of the finished item. In cake batters, lipids contribute to creating an emulsion structure – this means combining two liquids that wouldn’t usually mix. In the baking process, this helps to create a light, fluffy crumb.</p> <p>One of the primary differences between butter and oil is that butter is only about 80% lipid (the rest being water), while <a href="https://www.nutritionadvance.com/types-of-cooking-fats-and-oils/">oil is almost 100% lipid</a>. Oil creates a softer crumb but is still a great fat to bake with.</p> <p>You can use a wide range of oils from different sources, such as olive oil, rice bran, avocado, peanut, coconut, macadamia and many more. Each of these may impart different flavours.</p> <p>Other “butters”, such as peanut and cashew butter, aren’t strictly butters but pastes. They impart different characteristics and can’t easily replace dairy butter, unless you also add extra oil.</p> <h2>Aquafaba or flaxseed versus eggs</h2> <p>Aquafaba is the liquid you drain from a can of legumes – such as chickpeas or lentils. It contains proteins, kind of how egg white also contains proteins.</p> <p>The proteins in egg white include albumins, and <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC5912395/">aquafaba also contains albumins</a>. This is why it is possible to make meringue from egg whites, or from aquafaba if you’re after a vegan version.</p> <p>The proteins act as a foam stabiliser – they hold the light, airy texture in the product. The concentration of protein in egg white is a bit higher, so it doesn’t take long to create a stable foam. Aquafaba requires more whipping to create a meringue-like foam, but it will bake in a similar way.</p> <p>Another albumin-containing alternative for eggs is <a href="https://foodstruct.com/compare/seeds-flaxseed-vs-egg">flaxseed</a>. These seeds form a thick gel texture when mixed with a little water. The texture is similar to raw egg and can provide structure and emulsification in baked recipes that call for a small amount of egg white.</p> <h2>Lemon plus dairy versus buttermilk</h2> <p>Buttermilk is the liquid left over after churning butter – it can be made from sweet cream, cultured/sour cream or whey-based cream. Buttermilk mostly <a href="https://www.journalofdairyscience.org/article/S0022-0302(06)72115-4/fulltext">contains proteins and fats</a>.</p> <p>Cultured buttermilk has a somewhat tangy flavour. Slightly soured milk can be a good substitute as it contains similar components and isn’t too different from “real” buttermilk, chemically speaking.</p> <p>One way to achieve slightly soured milk is by adding some lemon juice or cream of tartar to milk. Buttermilk is used in pancakes and baked goods to give extra height or volume. This is because the acidic (sour) components of buttermilk interact with baking soda, producing a light and airy texture.</p> <p>Buttermilk can also influence flavour, imparting a slightly tangy taste to pancakes and baked goods. It can also be used in sauces and dressings if you’re looking for a lightly acidic touch.</p> <h2>Honey versus sugar</h2> <p>Honey is a <a href="https://resources.perkinelmer.com/lab-solutions/resources/docs/APP_Analysis-of-Sugars-in-Honey-012101_01.pdf">complex sugar-based syrup</a> that includes floral or botanical flavours and aromas. Honey can be used in cooking and baking, adding both flavour and texture (viscosity, softness) to a wide range of products.</p> <p>If you add honey instead of regular sugar in baked goods, keep in mind that honey imparts a softer, moister texture. This is because it contains more moisture and is a humectant (that is, it likes to hold on to water). It is also less crystalline than sugar, unless you leave it to crystallise.</p> <p>The intensity of sweetness can also be different – some people find honey is sweeter than its granular counterpart, so you will want to adjust your recipes accordingly.</p> <h2>Gluten-free versus regular flour</h2> <p>Sometimes you need to make substitutions to avoid allergens, such as gluten – the protein found in cereal grains such as wheat, rye, barley and others.</p> <p>Unfortunately, gluten is also the component that gives a nice, stretchy, squishy quality to bread.</p> <p>To build this characteristic in a gluten-free product, it’s necessary to have a mixture of ingredients that work together to mimic this texture. Common ingredients used are corn or rice flour, xanthan gum, which acts as a binder and moisture holder, and tapioca starch, which is a good water absorbent and can aid with binding the dough. <!-- Below is The Conversation's page counter tag. David Morrow steps down from 2GB

<p>David Morrow will step down from his role on 2GB's <em>Continuous Call Team</em>, following a brain cancer diagnosis.</p> <p>Morrow's colleague, Ray Hadley, announced the sports broadcaster's departure and cancer diagnosis on 2GB today.</p> <p>Hadley revealed that Morrow was stepping back from all commentary duties to focus on his treatment and to spend time with his loved ones.</p> <p>Morrow has been working at 2GB since 2015, with a career that has spanned 52 years, including over four decades of covering first-grade rugby league, eight Olympic Games, and six Commonwealth Games.</p> <p>His colleagues have shared their support for the sports broadcaster.</p> <p>Luke Davis, 2GB's Head of Content, said it had been an "honour" to have Morrow as part of the <em>Continuous Call Team</em> and the broader Nine Radio family.</p> <p>"For more than five decades, David Morrow's voice has been the soundtrack of some of the greatest sporting moments Australia and the world has seen," Davis said.</p> <p>"His knowledge and passion for sport has burst through Australian radios each and every weekend – a familiar and iconic sound.</p> <p>"'Thirsty' has called countless epic individual performances and sporting battles in his time. 15 hacks that make running errands so much better

<p><strong>Run errands during the week</strong></p> <p>More than 90 per cent of people do errands on the weekends, meaning shops will be packed and traffic will be a nightmare. Running errands on a weeknight will get you in and out in half the time. Once the kids are in bed, have one parent stay home while the other drives to the shops. You’ll miss the crowds and keep your weekend free for fun and family.</p> <p><strong>Turn on a podcast</strong></p> <p>Radio music – and its deejays and commercials – can get intense. Switch off the FM and plug in your phone so you can listen to a podcast or audiobook. You’ll be more relaxed, and the time will fly as you get engrossed in the story.</p> <p><strong>Make the most of your time</strong></p> <p>Never run out for just one task. Save time, petrol, and stress by getting more than one thing done when you’re out of the house. After dropping your child off at soccer practice, drop off your dry cleaning or pick up the milk from the supermarket.</p> <p><strong>Set up an errand centre in your home</strong></p> <p>Keeping all the objects you’ll need to complete your errands – packages to be mailed, dry cleaning to be delivered, library books to be returned – in one place will make it easy to get out the door when you get the chance. Designate a space by the door or in your car as a visual reminder of what needs to get done.</p> <p><strong>Buy in bulk</strong></p> <p>Picking up big batches of items like toilet paper, dog food, and tampons means fewer trips to the supermarket and less time running errands. Plus, you save money by buying bulk packages or stocking up while the items are on sale.</p> <p><strong>Use long lines for "me time"</strong></p> <p>Instead of griping about how long your wait to the cash register is, think of it as a few peaceful moments to yourself. Close your eyes (don’t be self-conscious!) and imagine yourself sitting on a quiet beach or getting a massage. Take several deep breaths while you mentally escape to that place. You’ll be much more relaxed, and you can wait in line with less frustration.</p> <p><strong>Practice mindfulness</strong></p> <p>Performing a ‘walking meditation’ while you shop will keep you engaged with your task instead of letting your mind wander to other stressors. By the end of your trip, you’ll have more energy and less frustration. Pay attention to the bright colours of the produce, the scents wafting from the bakery, and the feeling of each step you take.</p> <p><strong>Do someone else's errands</strong></p> <p>If you have an elderly neighbour or know a mother with young kids, offer to add some of their tasks to your to-do list. Studies have shown that helping others can reduce stress.</p> <p><strong>Tune out</strong></p> <p>Instead of drowning out your thoughts with music, keep the radio off when you’re driving and allow your own thoughts to come to you. The stimuli of everyday life can be overwhelming, so this is your chance to recharge your energy in the silence.</p> <p><strong>Keep a grocery list on your phone</strong></p> <p>You probably buy the same things on most of your grocery runs. Instead of writing a new list every week, keep an ongoing list on your phone, which makes it easy to add and remove items. Organise your list in the order you’ll find them at the supermarket. For instance, if you start near the produce section, write the fruits and vegetables first.</p> <p><strong>Reward yourself </strong></p> <p>To keep yourself motivated while you’re out, add a little luxury to your shopping list. Treat yourself with nice bath soap, a bouquet of flowers, or your favourite craft beer.</p> <p><strong>Keep an ongoing errands list</strong></p> <p>Write down your usual tasks, along with the ones you keep forgetting to do, like buying socks for your child or making a vet appointment for the dog, in a notepad. Carry it with you so you don’t miss anything when you’re out. When you’re home, stash it where the rest of your family can access it and jot down their needs.</p> <p><strong>Buy online as much as possible </strong></p> <p>The possibilities are endless: order groceries, buy stamps, cash checks, and renew library books online. Giving your credit card number over a secured server is safer than stating your number over the phone, and sometimes safer than handing your card over at a store.</p> <p><strong>Alternate tasks with your neighbours </strong></p> <p>Make a deal with your neighbours in which you do the grocery shopping one week, and they take care of it the next. You can watch each other’s kids when it’s your turn to stay home, and both of you will make fewer trips to the supermarket. Or plan to go grocery shopping with a friend. You’ll have more fun with the social support, and your kids might behave better with someone else present.</p> <p><strong>Have dad run errands with the kids</strong></p> <p>Kids who cook, clean, and run errands with their dads have more friends and are better behaved, according to a University of California study. Make sure your partner (or you, if you’re a dad) takes the kids along every now and then. Selfie-taking tourists launched from Venice gondola after refusing to sit down

<p>A group of rowdy tourists have ended up in the waters of a Venice canal after causing a ruckus onboard the boat. </p> <p>Six passengers were travelling on a canal in the Italian hotspot when the boat was heading towards a low bridge that they needed to pass under. </p> <p>The gondolier explained to the tourists that they needed to sit down and be still as the boat passed under the bridge, explaining that a change in weight would cause an issue. </p> <p>Despite the gondolier's warning, the tourists continued to stand up and move around the narrow vessel to take selfies of their journey. </p> <p>Predictably, ignoring the requests of the gondolier caused the vessel to capsize, sending the tourists into the freezing water as the gondolier jumped to safety. </p> <p><iframe style="border: none; overflow: hidden;" src="https://www.facebook.com/plugins/video.php?height=314&href=https%3A%2F%2Fwww.facebook.com%2FSkyNewsAustralia%2Fvideos%2F854034223389998%2F&show_text=false&width=560&t=0" width="560" height="314" frameborder="0" scrolling="no" allowfullscreen="allowfullscreen"></iframe></p> <p>No one was injured in the mishap, as the tourists swam to safety at the bank of the canal, before seeking refuge at La Fenice theatre, according to Venice police.</p> <p>According to a spokesman for the city’s gondola association, the gondola was not damaged, although the upholstered furniture in the vessel was ruined by the water. </p> <p>The spokesperson went on to confirm that the gondolier had instructed the tourists not to move around or stand up to take selfies during the manoeuvre, but due to a language barrier, the tourists did not comply.</p> <p><span style="font-family: abcsans, -apple-system, BlinkMacSystemFont, Segoe UI, Roboto, Helvetica Neue, Arial, sans-serif;">A video of the incident was posted to an Instagram page called Venezia Non è Disneyland (Venice Is Not Disneyland), an account run by young locals to chronicle tourism in the city, with the video being flooded with comments about the misbehaved tourists. </span></p> <p><span style="font-family: abcsans, -apple-system, BlinkMacSystemFont, Segoe UI, Roboto, Helvetica Neue, Arial, sans-serif;">Many Italian locals were quick to point out how rowdy the tourists must've been to cause the incident, with many pointing out they "didn't know it was possible to capsize a gondola". </span></p> <p><em><span style="font-family: abcsans, -apple-system, BlinkMacSystemFont, Segoe UI, Roboto, Helvetica Neue, Arial, sans-serif;">Image credits: Facebook</span></em></p>
